From Your Oven to Their Heart
With a few healthy ingredients you can bake up a perfect coffee side-dish and wonderful gift in less than 2 hours!
Of course we’re talking Coffee Cake!
And not just any coffee cake, this amazing and delicious recipe is not only scrumptious, it’s healthy too. (Gluten-free, dairy-free and no refined sugars)
Healthy Coffee Cake Recipe
Ingredients (What to gather up!)
- 2 cups gluten-free oat flour
- 2 ½ cups almond flour
- 2 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ½ tsp. ground cinnamon
- ¾ cup vegetable oil
- ¾ cup coconut milk
- ¾ cup unsweetened vanilla cashew milk
- ¾ cup pure maple syrup
- ⅔ cup coconut sugar
- 4 eggs
- 2 tsp. vanilla extract
- 1/2 cup walnuts (chopped)
Instructions (How to mix it up!)
- Start by preheating your oven to 375°F and grease up a bundt pan with baking spray
- In a large bowl, mix together the flours, baking powder, baking soda and salt. Set it to the side
- In a different large bowl, combine the oil, coconut milk, cashew milk, maple syrup and vanilla extract. Add the eggs, one at a time, mixing until well blended
- Stir dry ingredients into the wet (Don’t forget the walnuts!). Pour half of the batter into the bottom of the prepared bundt pan
- In a small bowl, stir together the coconut sugar and cinnamon. Sprinkle half the mixture over the top of the batter in the bundt pan
- Pour the remaining batter into the bundt pan, sprinkle the remaining cinnamon sugar mixture over the top
- Bake for 45-50 minutes, until a toothpick inserted in the center comes out clean. Remove and let cool
- Once the pan is cool enough to touch, place a large plate over the top of the pan, flip it over to release cake from the pan
